I am sick of making the same recipes over and over again, so I decided to start a recipe blog. I originally started this hoping others would email me great recipes! But now I have it so I can come up with a menu each week. Planning ahead helps me so that I don't need to think about what to make each night! Plus now I have a great database to search when I am planning what to make :)Especially since I am allergic to milk. So besides the dairy labeled recipes all these recipes are dairy free!

Coco's Famous Caramel Popcorn

Ingredients:
1 stick butter or margarine
1 C brown sugar
1 C Karo Light Corn Syrup
1 can of sweetened condensed milk
Dash of salt
3-4 bags of favorite microwave popcorn, popped

Combine butter/margarine, sugar, and karo syrup over med high heat. Stir with a plastic or wooden spoon while ingredients melt and combine. (I don't know why it has to be plastic or wooden but it does) Bring to a boil and continue to stir until liquid reaches a soft ball state. It takes me about 3 or 4 minutes of boiling. (Don't stress too much, if you do it too long, it will be less sticky, not long enough its just sticky. Either way, its yummy.) Put in can of sweetened condensed milk. stir again until it reaches soft ball state (about another 1-2 minutes). Add salt to taste. I add 1 tsp. Poor over popped popcorn, stir and enjoy!

For anyone who wants the lowest fat version, omit butter (it will just be a little bit harder and more sticky), and use fat free sweetened condensed milk. The fat free sweetened condensed milk doesn't change anything to the consistency or taste of the caramel. If you use air popped popcorn instead of microwave, be sure to add extra salt. But lets be honest, its better the real way, so just practice self control and eat a little of the full fat stuff! :)

**here is a funny side note to this recipe... my mom told me my Grandma Ione figured this out. If you put the popcorn in a plastic grocery bag right when it gets out of the microwave and spin it really fast, the unpopped kernals are still hot and melt through the bag and fall out. haha... I don't know how or why she figured that out... gotta love her! I just leave the kernals in...
