1 lb skinned, deboned chicken breast cut into 2/3" cubes
1/2 cup roasted cashew nuts
1/2 cup diced celery
1/4 cup diced onion
#1 sauce: 1 egg white 1/2 T cornstarch dash of pepper
#2 sauce: 1 tsp soy sauce 1/2 tsp salt, salt 1 tsp sugar, 1 tsp cornstarch, 2 T water
A. Combine chicken and #1 sauce. Let stand 20 min
B. Heat 2 T oil, stir fry chicken until lightly browned. Remove chicken and set aside.
C. Heat 1 T oil, stir fry diced onion and celery about 2 min. Add chicken and #2 sauce. Stir in roasted cashews, mix well and serve with rice.
